Does New Castle County, DE cap how many nights I can rent on Airbnb?

No. Unincorporated New Castle County does not currently impose a per-stay night cap or an annual rental-day limit specific to short-term rentals. The Unified Development Code (Chapter 40) does not contain a dedicated STR overlay. You must, however, register the rental property with the Department of Land Use (free, renewed by May 1 of each odd-numbered year) and collect Delaware's 8% Public Accommodations Tax.
