Under Minn. Rules 4626.2015, most retail food establishments must designate a Certified Food Protection Manager (CFPM) responsible for food safety oversight. The CFPM must hold a valid certificate from an ANSI-accredited program such as ServSafe or the National Registry. Certificates are valid for three years. Hennepin County Public Health and Minneapolis inspectors verify CFPM coverage during routine inspections. Mobile food units, school kitchens, and certain low-risk operations may qualify for limited exemptions. Failure to maintain a CFPM is a critical violation.
Operating without a Certified Food Protection Manager on staff is a critical violation that must be corrected by the next inspection or earlier enforcement deadline.
