Anyone who handles unpackaged food in an Anchorage restaurant, cafeteria, or food truck must hold a valid Alaska Food Worker Card under 18 AAC 31.012, obtained by passing the state-approved exam within 30 days of hire.
Alaska Food Worker Cards are issued by the Alaska Department of Environmental Conservation after completion of an approved online or in-person course covering safe temperatures, cross-contamination, handwashing, and illness reporting. The card is valid for three years statewide. Anchorage employers must keep cards on file and present them on inspector request. In addition, every Anchorage food establishment must have at least one Certified Food Protection Manager (ANSI-accredited) on staff. Volunteer cooks at temporary events and church kitchens generally are exempt but still encouraged to take the course.
Employing uncertified food workers, missing manager certification, or failing to produce cards on inspection can trigger MOA notices of violation, fines, and permit suspension under AMC Title 16.
