The Food Handling Regulation Enforcement Act (410 ILCS 625) and the Illinois Food Service Sanitation Code (77 Ill. Adm. Code 750) impose statewide sanitation, equipment, and food protection manager requirements on mobile food units. Every mobile unit must have at least one certified food protection manager and food handlers must complete approved training. Local health departments issue retail food licenses, but the underlying sanitation standards, hand-washing facilities, and temperature control rules are uniform state requirements. The 2018 FDA Food Code is adopted by reference.
