Unincorporated Jefferson County has no countywide grass-height number the way cities do. In the foothills WUI, tall dry grass is governed instead by wildfire defensible-space standards; on the plains your city or fire district may set a height. Noxious weeds must still be managed under state law.
Jefferson County zones unincorporated land but does not publish a fixed lawn-height limit (e.g. '6 inches') like incorporated cities. For most residents the real rules are two: (1) the Colorado Noxious Weed Act duty to manage designated noxious weeds (CRS 35-5.5-104), and (2) in the Wildland-Urban Interface, the Zoning Resolution defensible-space standards requiring dry grass and light fuels near structures to be kept mowed and cleared. Incorporated cities inside Jeffco (Lakewood, Arvada, Wheat Ridge) set their own tall-grass height limits, and those apply within their limits, not the county's.
No flat height fine at county level; enforcement runs through noxious-weed abatement (up to $1,000/violation, CRS 35-5.5-118) or WUI defensible-space non-compliance.
