Always store and handle propane cylinders for gas smokers in accordance with California Fire Code Chapter 61 and NFPA 58, and never operate a fuel-burning smoker indoors.
Operating a smoker on a combustible balcony or within 10 feet of combustible construction (without sprinklers) violates the California Fire Code. Smoke that creates a nuisance can draw APCD complaints, and a smoker that ignites surrounding vegetation can result in liability for fire-suppression costs.
