Operators must obtain an ANSI-accredited Certified Food Protection Manager (CFPM) certificate and register annually with the Cook County Department of Public Health. Registration is free by state law. Allowed products include baked goods, jams, jellies, dried herbs, candy, granola, and since 2018, chilled foods, canned tomato products, and pickles. Prohibited items include meat, poultry, fish, most dairy, and potentially hazardous pies. All products must be prepackaged with labels showing the operation name, registration number, municipality, all ingredients in descending order by weight, and a notice stating the product was produced in a home kitchen not inspected by a health department. Sales must be direct to consumers and not through retail food establishments.
