Class B operations may also sell indirectly through stores and restaurants but require a Fresno County Environmental Health permit and a home kitchen inspection. Selma does not require a separate city permit or business license specifically for cottage food operations, consistent with state law that prohibits local jurisdictions from imposing business license fees on cottage food operators. Home kitchen labeling requirements include the statement that the product is made in a home kitchen and is not inspected by a health department (Class A). Operators must complete a food processor course approved by the county.
