Class B operators must obtain a permit from the county and pass a kitchen inspection.
Cottage food operators who fail to register with the county or who sell prohibited food items may face enforcement by the Fresno County Department of Environmental Health. Selling above the annual gross sales cap can result in reclassification or permit revocation. Food safety violations are handled at the county and state level rather than by city code enforcement.
