Grays Harbor County, WA Food Trucks & Mobile Vendors: Food Truck Permits (2026)

Chapter 15.04.050 of the Grays Harbor County Code amends the International Fire Code's operational-permit schedule. The county repealed nearly all of the standard IFC operational-permit categories, Sections 105.6.1 through 105.6.29 and 105.6.31 through 105.6.46, but it kept and rewrote Section 105.6.30: any mobile food preparation vehicle working in unincorporated Grays Harbor County must carry a valid Mobile Food Preparation Vehicle Permit issued by an approved agency. The fire code chapter is administered by the planning and building division, which the ordinance places under the direction of the fire marshal, and every reference in the adopted International Fire Code to a department of fire prevention or a fire code official is redefined to mean the division and the fire marshal.

The chapter's general permitting rules apply on top of the vehicle-permit requirement. A construction permit issued under this title becomes invalid if the authorized work is not started within 180 days or is abandoned for 180 days; resuming after that costs half the original permit fee if the plans have not changed and the lapse has not run past a year. Operating, building, or modifying anything the fire code regulates before the required permit is obtained triggers an investigation fee equal to the permit fee, charged on top of the permit fee itself, whether or not a permit is later issued. Continuing work after a stop-work order is issued exposes the operator to enforcement action under Chapter 15.16. Appeals of a fire marshal or building official permit decision go to the county's Building Codes Advisory Council, following the procedures in Chapter 2.14 and Chapter 15.16 of the county code.
