A person who seeks to operate a mobile food unit must submit to the health authority an application for a permit provided by the health authority.(b)A food establishment that uses a vehicle in the operation of a mobile food unit shall:(1)Identify the vehicle name with characters three inches high on at least three exterior sides of the vehicle stating the following:a.The name of the mobile food unit as indicated on their permit;(2)A mobile food unit shall display a current permit and the most recent inspection where they are readily visible to the customer as designated by the local health authority.(c)For a mobile food unit to continue to be permitted yearly, operators shall bring all permitted mobile food units to a location designated by the health authority for annual inspection.
