Milwaukee enforces this rule through Health Department inspections under Milwaukee Code Ch. 68. Unlike some jurisdictions, Wisconsin does not require every food worker to hold a card; the certification requirement applies to a designated manager only. CFPM certificates are valid for five years. New establishments must designate a CFPM at licensing; turnover requires replacement within 60 days.
Operating without a CFPM on staff is a critical violation that triggers re-inspection fees, possible license non-renewal by the Licenses Committee, and citations under Milwaukee Code Ch. 68.
