Unincorporated Snohomish County requires a fire code permit for any mobile food preparation vehicle equipped with an appliance that produces smoke or grease-laden vapors, or that runs an LP-gas or CNG fuel system. The county fire marshal issues the permit, billed annually, covering propane griddles, deep fryers, and open-flame cooking gear used in food trucks and trailers.
