Omaha follows the Nebraska Food Code, which requires food establishments to have a Certified Food Protection Manager but does not mandate individual food handler cards for every employee.
Under Nebraska Title 178 and the adopted FDA Food Code, every licensed food establishment must employ at least one Certified Food Protection Manager who has passed an ANSI-accredited exam such as ServSafe. DCHD verifies CFPM credentials during inspection. Nebraska does not require a city-issued food handler card for every line cook or server, unlike some western states, but operators remain responsible for training staff on hygiene, allergens, and temperature control under the food code.
Lacking a Certified Food Protection Manager on staff or failing to produce certification during inspection is a critical violation that can prompt re-inspection or fines.
