Texas law requires every food employee in Plano restaurants to complete an accredited food handler course within sixty days of hire. At least one certified food protection manager must also be on staff at each permitted establishment.
Under Texas Health and Safety Code Chapter 438 and 25 TAC Chapter 229, food employees handling unpackaged food, food equipment, or utensils must obtain an accredited food handler certificate within sixty days of employment. Certificates are valid statewide for two years. Each Plano food establishment must additionally employ at least one Certified Food Protection Manager who has passed an ANSI-accredited exam. Collin County Environmental Health verifies certifications during routine inspections. Cottage food operators selling baked goods or jams from a home kitchen are exempt from the manager requirement but must still complete a food handler course before selling to the public.
Working without a valid food handler certificate after sixty days, or operating with no certified food protection manager on staff, can result in inspection demerits, employee removal from food contact duties, and administrative penalties.
