Full Breakdown

Every food employee in Twain Harte restaurants, the Eproson House area, and Dodge Ridge concessions must obtain a California Food Handler Card under Health and Safety Code section 113948. Cards are valid for three years and require passing an ANSI-accredited course such as ServSafe or StateFoodSafety. Tuolumne County Environmental Health verifies card possession during routine inspections. Owners must keep records on premises. Person-in-charge certified Food Safety Manager status (CFPM) is also required for at least one employee per facility under separate state rules.

Violations & Fines

Operating without valid cards triggers inspection citations, restaurant fines, and possible permit action by Tuolumne County.
