All food employees in Lincoln must complete an LLCHD-approved food handler training program within thirty days of hire, and each licensed establishment must have at least one Certified Food Protection Manager on staff.
Lincoln Municipal Code Title 8 and the Nebraska Food Code require every food employee to complete an accredited food handler course covering hygiene, temperature control, cross-contamination, and allergen awareness. LLCHD accepts ANSI-accredited online courses and its own in-person classes. New hires have thirty days to complete training. Each food establishment also must employ a Certified Food Protection Manager (ServSafe or equivalent) responsible for active managerial control. Cards must be available for inspection on-site. Inspectors verify cards during routine visits.
Missing certification cards, expired credentials, or untrained employees can result in critical violations on the inspection report and follow-up enforcement.
