Nevada Food Truck Health Permits and Inspection Rules

NRS Chapter 446 and NAC 446.010 et seq. govern all food establishments, including mobile food units, in Nevada. The state has adopted the FDA Model Food Code as its baseline. Food trucks must obtain a permit from the local health authority (Southern Nevada Health District, Washoe County Health District, or rural state-administered districts), pass plan review, and maintain a contract with an approved commissary for waste disposal, water filling, and food storage. Operators need certified food protection manager credentials. Trucks must have hand-washing sinks, three-compartment warewashing or equivalent, mechanical refrigeration, and proper ventilation. Inspections occur at minimum annually with risk-based frequency.

Operating without a health permit is a misdemeanor and may result in immediate closure. Critical violations, repeat offenses, and imminent health hazards trigger permit suspension, fines, and embargoes.
