Hudson, NH Food Trucks & Mobile Vendors: Food Truck Permits (2026)

Hudson licenses food trucks, canteen-type trucks and mobile vending units under the same hawker-and-peddler framework used for any itinerant seller, so a license from the Board of Selectmen is required under § 232-1 before operating. The application, filed on a town form under § 232-3, must include the applicant's name and address, a description of the food or merchandise, a valid New Hampshire hawkers-and-peddlers or itinerant-vendor license, a description of the vehicle and its registration, a license from the Town Health Officer for anyone selling food or beverages, a description and zoning certificate for the proposed location, written permission from the property owner, and proposed hours of operation.

Since 2011, every applicant must also pass a state and federal background check under RSA 31:102-b, at the applicant's own expense, though a check already filed with another New Hampshire town will satisfy Hudson's requirement. Fees are charged per day, week or year, whichever is less, with the current schedule kept in Chapter 205; sales of the operator's own farm produce and sales by tax-exempt veterans or organizations are exempt from the fee. Once operating, a truck can't sell food without a current Town Health Department permit under § 232-7E, must provide a litter receptacle for anyone eating on the spot, and must clean up any trash left by its customers. Licenses run through December 31 each year and can be revoked for any violation.
