Jefferson Parish requires food vendors cooking outdoors during Carnival Parade Season to get a Fire Department permit and follow strict fire-safety rules for their cooking equipment. A fire-resistive barrier is mandatory, or the equipment must sit at least 50 feet from any structure and 25 feet from anything combustible, with fire extinguishers and a $1 million insurance certificate also required.
